Sopapillas

I've been meaning to post this recipe for awhile now. For Cinco de Mayo, I made sopapillas for dessert and everyone loved them! They're really easy to make and are super good!

1 3/4 c flour

2 tsp. baking powder

1 tsp. salt

2 tbsp. shortening

2/3 c cold water

Sift flour, baking powder and salt into a mixing bowl. Add shortening and cut in. Add water gradually. Mix just enough to hold together as for pie crust. Turn onto lightly floured surface and knead gently until smooth. Cover and let dough rest 5 minutes. Roll out into rectangle about 1/16 to 1/8 inch thick. Cut into oblongs. Drop a few squares at a time into deep, very hot oil. At first, trun squares over 3 or 4 times to make them puff evenly. Fry until golden brown. Sopapillas will puff up like little pillows.

*Sprinkle with cinnamon-sugar, powdered sugar or honey

WATCH OUT TACO JOHNS!! These sound yummy and look way better than the ones we had this summer! I really want to make them. Good job, I am proud of you :)
