Feels like summer!

Well, we're finally getting some nice weather and decided to take advantage of it today. We went to the park this morning and watched the Hot Rod Parade downtown. Jack rode in it with Papa last year and missed being able to do it, but he still loved seeing all the cars.
My parents brought dinner over later and Oma baked cookies with the kids. She brought frosting and sprinkles, too...enough said.

All in all, it was a good Saturday. We miss Kevin like crazy but are so thankful that he is able to be with his mom as she recovers from surgery. She seems to be doing well and wish her a healthy, speedy recovery.

A Prayer for Sherry

Prayer for Healing
Lord, look upon me with eyes of mercy. May your healing Spirit rest upon me. It is through your power that I was created. Since you created me from nothing, you can certainly recreate me. Fill me with the healing power of your spirit. May your lifegiving powers flow into every cell of my body and into the depths of my soul. Mend what is broken. Cast out anything that should not be within me. Rebuild my brokenness. Restore my strength for service in your Kingdom. Touch my sould with Your compassion for others. Touch my heart with Your courage and infinite love for all. Touch my mind with Your wisdom, that my mouth may always proclaim Your praise. Teach me to reach out to You in my need, and help me to lead others to You by my example. Most loving heart of Jesus, bring my health in body and spirit that I may serve You with all my strength.

My mother-in-law, Sherry, is at the Mayo Clinic in Rochester having surgery this morning and I wanted to send a prayer to her. Kevin is flying out to be with her this weekend and we are all sending our love, thoughts, and prayers to her. We love you, Sherry.

Sopapillas

I've been meaning to post this recipe for awhile now. For Cinco de Mayo, I made sopapillas for dessert and everyone loved them! They're really easy to make and are super good!

1 3/4 c flour

2 tsp. baking powder

1 tsp. salt

2 tbsp. shortening

2/3 c cold water

Sift flour, baking powder and salt into a mixing bowl. Add shortening and cut in. Add water gradually. Mix just enough to hold together as for pie crust. Turn onto lightly floured surface and knead gently until smooth. Cover and let dough rest 5 minutes. Roll out into rectangle about 1/16 to 1/8 inch thick. Cut into oblongs. Drop a few squares at a time into deep, very hot oil. At first, trun squares over 3 or 4 times to make them puff evenly. Fry until golden brown. Sopapillas will puff up like little pillows.

*Sprinkle with cinnamon-sugar, powdered sugar or honey

Soccer Saturday

Jack had his third soccer game today and he did so great! He runs down the field and kicks the ball when it comes to him. Kevin is frustrated that he isn't more aggressive about going after the ball, so I have to remind him...JACK IS ONLY 3!

The past few days Jack has been telling me that he's been working on some new soccer "moves". To our surprise, he showed them off during the game today. Here's some of his more classic moves...

I love Jack so much! He is absolutely hilarious and cracks us up continuously. I am always amazed at his sense of humor and attempts at sarcasm. Sometimes he seems like such a little man...where has the time gone?
On a side note-
I love the relationship that Kevin and Joey are building. As with Jack, the first 8 months to a year of Joey's life Kevin complained that she didn't like him because she never wanted him - only me. I know this is the case with most children being attached to their mom for the first year or so and tried explaining it to Kevin (to no avail). But the past 2 or 3 months, Joey has gotten so attached to Kevin that it absolutely warms my heart like crazy. She runs to him and yells, "Daddy!" and wants him to hold her and cuddle with her. He's the only one she wants to clean her up after dinner and she loves dancing with him. She is turning into such a daddy's girl...I love it!
Also - I do clean my children's faces...I swear!

How long has it been?

Geez, I've been terrible about blogging lately! Here's a quick rundown of what we've been up to the past few weeks...

Jack has been doing so great at soccer! The first game he refused to play without Kevin or I going out onto the field with him, but by the second game he was ready to go on his own and did awesome!! Joey is having a hard time with not being able to play, but she still likes to cheer Jack on!

The weather is finally starting to warm up and I can't wait to plant flowers and enjoy the sun. I am, however, dreading the endless hours of watering our lawn - no sprinklers:( Fingers crossed we'll get a sprinkler system sometime this summer!
